CUCUMBER ZUCCHINI CHILLI SALAD

Digging through my photo archives I found this salad I made about a year ago. I wanted to share it because it's the perfect summer salad — The Netherlands hasn't deep dived into summer yet... I'm not holding my breath either but where you are maybe the sun is shining — It's fresh and creative with a bit of a Thai flavour to it. 

The salad consists of peeled zucchini, cucumbers, a chilli dressing and pomegranate seeds. I think it would be perfect with some barbequed pork skewers or shrimp.


Cucumber Zucchini Chilli Salad
Serves 2

Dressing
Juice of 1 lime - about 1.5 tbsp
2 tsp sugar
3 tbsp vegetable oil
1 tsp chilli
1 tsp fish sauce

Ingredients
half a large cucumber sliced
half a zucchini shaved with a peeler
handful or coriander
seeds from a half of a pomgranate

Ready your vegetables by slicing your cucs, peeling the zucchini and deseeding the pomegranate. 

Place all of the ingredients for the dressing in your salad bowl and whisk until the sugar has desolved.

Toss the cucumbers and zucchini in the dressing and then sprinkle the pomegranate and coriander on top before serving.
