A different take on a sweet cheesy treat. German style cheesecake, Quark cake!
Quark is a very fresh cheese with the consistency of yogurt and a slight cheesy tang. You can find Quark in the Netherlands and Germany but in France it's called fromage frais. I can't really say its a favourite straight out of the tub but it does bake up well and this cake is a testament to it.

Quark Cake
loaf pan or 23cm round tin
120 g caster sugar
3 eggs
500 g Quark
1 teaspoon vanilla essence
1 teaspoon lemon rind, grated
1 teaspoon lemon juice
60 g flour
6 ginger cookies
Turn the oven to 175 C and prepare your tin by lining it with baking paper. This will make it easier to lift out!
Crush the ginger cookies and pat them into the bottom of the tin.
Place the rest of the ingredients in a bowl and whip them until fluffy and incorporated.
Pour the mixture on the cookies and bake for 45 - 55 minutes.
The cake will inflate in the oven and then deflate while cooling. This is normal.
Let the cake cool, it tastes better. It's also good out of the fridge.
